WHO I AM: I am Dawid, a professional chef and the driving force behind The Rebel Bites. I serve brutally good, authentic Greek street food, destroying culinary boredom at every event. My philosophy: masterful quality doesn’t have to cost a fortune, and street food should have a loud, unforgettable taste.

MY ARSENAL (MENU): No half-measures. I import the real deal straight from Greece - authentic Alexakis pitta breads and certified Bikre meats. I serve heavy hitters like:

• Gyros 'n Roses: The ultimate classic. Chicken or pork gyros, fries, and my signature tzatziki.

• Grillvana: Massive lamb & beef koftas for the real carnivores.

• Smells Like Halloumi Spirit: A vegetarian banger with premium grilled halloumi.

• Another Bowl in the Wall: Fresh Tabbouleh-Quinoa salad with marinated feta for the lighter crowd.

MY MACHINE (CAPACITY): I operate from a heavy-duty, fully equipped 5-metre trailer. My setup includes a 4-burner kebab machine, twin free-standing gas fryers, and a massive 3-burner flat top. What does this mean for you, the organiser? Blistering service speed (under 2 minutes per ticket) and zero bottlenecks, even with massive crowds. My menu is 100% modular, keeping the line moving without dropping quality.
