Our Dough

Great pizza starts with exceptional dough, and there are no shortcuts to getting it right. Every batch is crafted with care, time, and expertise-and we think the results speak for themselves.

With over 12 years of experience, formal training in Italy, and certification as AVPN pizzaiolos, we've perfected a traditional 48-hour fermented dough that delivers exceptional flavour, texture, and digestibility.

While our methods are rooted in authentic Neapolitan tradition, every batch is carefully adapted to the conditions of the day. By adjusting our flour blends and ingredient ratios to account for changes in temperature and humidity, we ensure every pizza is made to the same consistently high standard, whatever the weather.

Our Ingredients

At the heart of Italian cooking is a simple philosophy: exceptional ingredients speak for themselves. Rather than relying on complexity, we believe great pizza begins with carefully sourced, high-quality produce.

We work closely with trusted local butchers and farms to source the meats used for our slow-cooked pulled pork and rich ragù pizzas. Our Fior di Latte mozzarella is produced just three hours away by an Italian-owned company in the UK, using only British milk to create an authentic, fresh mozzarella of outstanding quality.

For the true flavours of Naples, we import our cured meats, tomatoes, and flour directly from Italy. Every ingredient is carefully chosen for its quality, provenance, and authenticity, with full traceability and a commitment to the highest standards, including D.O.P. certification where applicable.

We believe that when you start with the very best ingredients, every pizza can be something truly special.

Ideal for a quick delivery, where guests get to experience and try a wide range of different, unique pizzas. It works great for any event.

Per Head

Great for more relaxed events where guests have the time to socialise spread across a longer time period. Each guest is able to order any pizza they wish from our 25-pizza menu.

Your wedding day deserves something truly unforgettable. From the first slice to the final bite, we create a bespoke pizza menu tailored to your celebration, ensuring every detail feels personal and special.

Our handcrafted pizzas are prepared fresh before your guests' eyes and cooked to perfection in our large wood-fired oven. Served from our beautifully converted van, our stylish setup adds a unique touch of charm, romance, and theatre to your reception.

Desserts

Authentic Tiramisu, served per head to each guest on small plates with serving spoons. Freshly filled large cannoli, Sicilian pastries consisting of a tube-shaped shell of fried pastry dough, filled with a sweet and creamy filling containing ricotta cheese and topped with candied orange peel, pistachio or chocolate glaze.
